Recipe: Coco Cups

These are so ridiculously delicious.  I know I say that a lot, but really, they are.  Easy to make and a healthy snack to have on hand.  I take half the batch to work and they’re a great pick me up in between meals.  Not to mention they give me my chocolate fix.

Ingredients:

1.5 cups shredded coconut (unsweetened)

.5 cup coconut manna

.5 cup coconut oil

Tablespoon of vanilla

pinch of salt

.5 bag of dark chocolate chips (I use Whole Foods brand with 70% cacao)

Mix well all ingredients except chocolate in food processor.  I like the silicone cupcake liners for these.  I have the mini and the full size, doesn’t really matter.  Paper liners will work too.  Place liners in tin (or on a plate) and fill with 1 Tablespoon coconut mixture.  Place into freezer to let harden while melting chocolate.

In a double broiler, or as I do, a glass bowl on top of a pot of boiling water, place all the chocolate, add a pinch of salt and stir until completely melted.

Remove tarts from freezer, spread a teaspoon of chocolate on top of each.  Place in fridge until hardened.

After about an hour you can remove from the liners and put in a container.  Store in the freezer or fridge.
