Blog Post: Day 17
I took the day off to have another kick-butt-around-the-house day. That doesn’t usually work when you sit around sipping coffee until 10am. I was in the middle of working on the computer, when I texted my brother’s girlfriend just to see if they wanted to take an impromptu road trip to the mountains at the end of the month. She tells me if I come to VA I can see her and my brother get married. Say whaaa… Of course I get on the phone and minutes later I’m helping to plan a wedding! So that’s where my morning went.
My sweet hubby helped wrangle kids off my lap and breast and brought me a berry smoothie. At least that’s what I think it was…I was too busy talking to officiants and looking at parks and dreaming of lace gifts. I mean they’d been engaged for a little while, but no actual wedding plans had been talked about. Apparently they got their license and a ring for him earlier in the week and were going to be very hush hush about a justice of the peace visit. Until big sis chimes in. I just pleaded that it would break my heart if my baby brother exchanged vows without me present (it literally would). They are planning a larger ceremony in the future in Puerto Rico…yay!
Once my hubs could pry me away from the computer and the phone he persuaded me into a workout. Phew, it was a good one and much needed to get me moving. By this time it was near noon!
Lunch was a delicious mock tuna salad mixed with creamy dill sauce and wrapped in collards. I like this version because even though the dill sauce contains nuts, it’s a little lighter than the dill cheeze paté.
We had a kale, pineapple, cilantro & parsley smoothie as a snack.
Ever have one of those nights when you plan on making something for dinner but you’re missing like one ingredient and you don’t want to go to the store? We did. So dinner got switched up a little and we ended up having a smorgasbord of roasted veggies with a side of cauliflower mash. Pretty darn good and I could barely finish my plate. But that late night sugar monster came knocking again. I settled for eating 3 dates dipped in shredded coconut. I know, I know, right before bed, but it was that or run to the store for coconut milk ice cream!
