Blog Post: Day 16

Today was a good day for food! Even writing this now, I want this day to happen again.  Breakfast was sweet potato & veggie hash with two eggs.  I just threw everything in the food processor and chopped into little bits, fried in a pan with some avocado oil, cooked some eggs then mixed in.  Topped with some fresh parsley and Boom!  Breakfast to the max.

Those black bits are NOT tiny burnt pieces because I was chasing a naked two year old around trying to convince him to put on pants.  Not at all.  Still delish though.

Wasn’t even hungry for lunch considering breakfast was so awesome.  I snacked on an A&AB (apple & almond butter) sammy.  Basically a cored apple sliced into rounds with fresh almond butter stuffed between slices.  Had one before my workout and one after.

Dinner was roasted brussel sprouts, beet green salad, and cilantro & lime cauliflower rice.  Due to some timing issues, the brussel sprouts were more of an after thought.  We ate them on the couch while catching up on some Netflix faves.  The beet green salad was something I could literally eat daily.  Dreaming…
