Blog Post: Day 20
We are 2/3 of the way through! It’s going by pretty quickly. Life keeps you busy and distracted. As I keep saying, the key to a successful Health Challenge is preparation! This morning I was up at 7am making pineapple coleslaw for the day. Made lunch time a snap. Since I was doing that instead of getting ready for work, my hubs made breakfast. Our staple, eggs with sautéed kale, mushrooms and onions. Really can’t go wrong with that one…full of protein and cooked in the wonder fat, coconut oil.
Lunch was super easy since it was halfway prepared. We had pineapple coleslaw (yumm) and a baked plantain topped with guacamole. The plantain didn’t come out as crispy as I would have liked, but I didn’t want to fry it.
Snack today was a banana topped with freshly ground almond butter, Tbs of hemp seeds and a Tbs of shredded coconut. Hits the sweet tooth spot.
Dinner was off the chain. I made a beef stir fry with the left over eye round roast I had bought a few weeks ago. I had it defrosting in the fridge since yesterday, cut it into thin strips and stir fried it with broccoli, daikon radish, scallions, snow peas, organic red pepper, fresh ginger and garlic. Just the perfect amount of crisp to the veggies and salty flavor without all the added sodium. We had seconds. Also a large helping of pineapple cole slaw on the side.
I broke down tonight. I caved and gave into the sugar monster. But, I defend my choice and stand by the very healthy antioxidant & fiber rich after dinner snack.
