Blog Post: Day 11

Man, this Challenge is just breezing by! Watch out for those low points in the day though.  You know, too lazy to prepare anything and you find yourself starving and ready to eat raw macaroni out of a box that your two year old hands you.  Yea, that kind of starving.  So the trick is SNACKS.  Have plenty of ready to go food, ready to go.  We almost had a moment like that today.  Thank goodness for dried figs.  And almond butter.  And bananas.  Not all mixed together of course…

Today breakfast was leftover egg bake from dinner last night and a kale & pineapple smoothie.  Quick and easy to make and eat as I rushed breezed out the door completely ready and on time.

Lunch was the bomb today.  Hubs met me at work and after baby girl got her lunch we went and had a picnic outside.  Salmon and avocado salad wrapped in collards with some of the sweetest strawberries I have ever tasted on the side.  I don’t know why these were so good, they were my standard Costco purchase, but oh man they were Good. And yes, those are a couple radish mixed in with my berries.  Ya, I know, I’m weird, but I love radishes.

Sorry there’s no pic of the actual Salmon & Avocado salad stuffed inside, but remember, this is about the ideas of what to eat, not the pretty pictures.  But…keep scrolling, there’s a pretty one coming up soon.

IMG_1904Crazy girl loves radish right off the stems.  But, really, have you seen a root veggie so fresh and vibrant? Plus they’re high in Vitamin C, fiber and cancer fighting compounds as well as other benefits. Eat up!

Wonder WomanOkay, so I started this post talking about low points.  Well, we encountered one today.  You know how they say don’t ever go to the grocery store hungry….yeah, that’s a good rule to follow.  We were wandering around Trader Joe’s literally pointing out all the delicious junk food we can’t have.  Bad move.  Snacks as soon as we walked in the door… half a banana with almond butter sprinkled with hemp seeds, an apple, and a few dried figs.  That did the trick.

As awesome and delicious and fun as lunch was, dinner was about to blow that out of the water.  After playing a little b-ball in the driveway, just throwing it out there that we are ballers…Fisher Price can stand up to some aggressive balling by the way; mom turned on Pandora and we dance partied dinner into fruition.  There really isn’t anything better than preparing food with the ones you love, some great music, and all smiles.

Dinner was Garlic Yuca and Zucchini pasta with Pistachio Pesto.  It was seriously good.  Hubby probably “mmm’d” about 8 times while eating.

Pistachio PestoThe Pistachio Pesto recipe is from one of my favorite raw food chefs, Ani Phyo.  It’s in her book Ani’s Raw Food Kitchen: Easy, Delectable Living Foods Recipes.  I’ve learned a lot from her cookbooks and she even has one dedicated for desserts only.  Highly recommend (after this challenge of course).
