Blog Post: Day 12
Sunday is our kick butt in the house day. We bought our first family home about three months ago and it’s a long list of projects. This weekends project was our office. Hubs and I decided we wanted built-ins in our new fancy pants office and we’re going to tackle the job ourselves (thank you Pinterest). It’s fancy pants because our three previous offices were all located in our dining areas (not rooms, just areas). We now have a whole room dedicated to office stuff, yay! Anyways, thank goodness for our pre-written menu because we didn’t have to think about what we were going to eat. I prepared our lunch first thing because I needed to dehydrate it (lunch coming soon).
Breakfast was a simple kale, pineapple & coconut smoothie. Then off to Lowes!
After a few hours of painting, installing cabinets, staining, etc we had a small snack of half an apple and hubs had a little almond butter on it.
Lunch was the Sunburger I prepared earlier, out of the dehydrator and wrapped in collards with some mustard & (approved) mayo with a side of kimchi. Hubby was skeptical about the kimchi, but it was mild and I think he liked it.
Good stuff with healthy probiotics
We finished the office! Well, no not really, but we finished what we planned to for the day and it looks good. The last part of the built-ins will be left for another weekend. Our treat to ourselves what a family trip to Whole Foods to buy fish for dinner. Good lord being a meat eater is expensive! We are buying only the best quality we can get our hands on and we are paying the price, but so worth it. We are going to look into a local farmer for our other meats and I do need to do some research on best places to buy sustainable seafood.
Dinner was mahi over pan fried plantains topped with pico and an avocado crema. Very, very good. Nope, not suffering on this challenge at all.
