Blog Post: Day 13

Monday Funday!  Says no one ever.  Except The Puretarian Health Challengers!  Every day is a fun day when you feel this good.  Just kidding…today I woke up tired and then stayed that way all day.  And I got 7 hours of shut eye.  But, I guess just because my eyes are shut doesn’t mean I’m asleep.  Baby girl had me up on and off for a lot of the night with all her squirmies in the bed next to me, and even after putting her in her bassinet she quickly let me know that was not where she preferred to sleep.  So for most of the day I felt blah.  At least I had whole, nutritious food to keep me going.

And due to my extra blah day, today’s post is quick, simple and to the point.

Breakfast: Berry & Mango smoothie.  Filling, refreshing, and the best part is my hubby made it!

Snack: Blueberry Lara bar.  Ever notice on your especially blah days you crave carby sugary badness?  Well, Lara bars saved me today.  Got plenty of sugar from the dates and it’s packaged in a nice wrapper reminiscent of a candy bar so I felt a little sinful.

Lunch: Leftover sunburger wrapped in collards and leftover garlic yuca.  Just as delicious as the first time around and only minutes to prepare.

Second Snack: pan fried plantain topped with avocado creme.  Again, another carby snack.  Just one of those days.

Dinner: organic, grass-fed, free range steak with organic red cabbage steaks and steamed broccoli topped with himalayan salt and ghee.  This was the second time in two weeks of eating red meat, which is two more times than in the past 10 years (for me).  Granted, we are learning how to prepare it again since it’s been so long, but I have to say, I’m not loving it.  My hubby talks about cow meat like a giddy school girl with a crush, while I just think of it as a barely  tolerable professor.  My jury is still out on whether or not I will be incorporating this type of animal flesh back into my diet on a regular basis.

Unfortunately there is no picture of the finished product, my hubby really wanted to be in charge of cooking the steak and so it was ready a good while after the veggies (you know, still learning prep for meat), but it turned out beautifully. But, look how pretty the cabbage steaks are:
