Blog Post: Day 15

Past the halfway mark…whoop whoop!  Prepared for a long day with a green smoothie…coconut water, kale, pineapple, fresh herbs & a little chia seed.  Breakfast of champions.  And since I’ve made it more than two weeks with no dairy, no sugar, no grains, no legumes, did I say no sugar, I like to consider myself a champion. :)

Green is the New Black

Lunch was egg salad over mixed greens.  Hit the spot.  Then we snacked on raw pumpkin seed bread topped with leftover pistachio pesto.  I could eat this pesto with a spoon.  Well, actually…I may or may not have done just that.

Dinner was a family favorite, veggie curry.  Cauliflower, eggplant, tomato curry. Lots of fresh ginger and I love to add lots of coriander.  Just love it.  Typically we’d eat this with naan, and I can’t lie that I don’t miss it, however, it’s completely filling and satiating without it.
