Blog Post: Day 4
Breakfast: mango, berry & homemade almond milk smoothie with chia and coconut oil
Snack was leftover tabouli topped with chopped avocado
Lunch was egg & avocado salad over mixed greens. Avocado instead of mayo? Brilliant. I love mayo but I’ve gotta say, this is waaay better.
For dinner we had family over, one of whom is doing the challenge with us. She wanted to try her hand at cooking and seeing some new foods, so we decided to make the kale & butternut squash again. We made a double batch since there were more of us eating, but for some reason it didn’t turn out as yummy as the night before. Idk, I think we undercooked it a little. Still good though.
But it was a fun night. We also made sweet potato chips and zucchini hummus to snack on. And another bottle of almond milk.
