Blog Post: Day 5

Today was a travel day for us.  We were heading up to Myrtle to visit family for a few hours so we planned to eat a large breakfast and pack a lunch & snacks.  It worked out pretty well.  Planning is key!

Breakfast was sweet potato hash and eggs with mushrooms with a side of avocado.  Happy girl.

After a couple hours we both had a large organic Fuji apple for a snack.  Fuji apples are the best.  Hands down.

Lunch was salmon salad wrapped in collard leaves. Very filling.  First time having meat in a while, but I was ready.  My body needed a little fish protein. :) Just make sure if you’re eating seafood that it’s wild caught and a good quality.

It was such a gorgeous day to be outside, so on our drive home we took advantage of the weather and stopped in Pawleys Island for our picnic.  I nursed the baby while our terrible toddler sweet boy ran around in the grass and my hubby carved all our initials in a tree.  Ahhh bliss.

By the time we got home it was fairly late and we were pooped.  Smoothie and early bed for the boy and we had a smorgasbord of leftovers and snacks.

Dinner was steamed broccoli, delicata squash with ghee and salt, sweet potato chips and zucchini hummus.  All in stages at different times.  I think dinner started at 5:30 and ended at 8:30. Grazers.

snack time!You’ll notice some eggplant chips.  I was tired and getting too creative (they didn’t turn out well), but honestly I think they just needed to be cut a little thicker.

And then there was dessert.  We had to.  Homemade almond milk, glob of almond butter, coconut manna, 3 bananas and a date all blended up then topped with a sprinkle of cacao nibs.  O-M-G  The banana-almond-coconut shake was born.

The sound of the Vitamix brought our little guy downstairs (we’re working on migrating to a big boy bed) after three failed attempts he was sent back to bed in the crib.  But not before mommy snuck him a little cup of this deliciousness.  Shhhh…
