Blog Post: Day 6

Breakfast was good. I mixed it up with some extra veggies, zucchini, mushrooms, onion, fresh herbs, and then scrambled some eggs and mixed them in.  Yup this is the best pic I’ve got.  Remember this Challenge journal is not about the pictures, but about the ideas of what to eat. Begging forgiveness.

Veggies

Lunch was a big salad with leftover tabouli mixed in and Tesseme dressing.

Dinner was the last of the leftover kale & butternut squash.  We love this dish but probably won’t have it again for a few weeks! I was lazy and left it in the oven a little longer than I should. Can’t win ’em all.

Then our late night (you know, like 8:30pm) snack was sweet potato chips and guac. I’m working hard to perfect these chips.  Too thick and they don’t crisp.  Too thin and they burn.  Too much oil and they’re soggy.  Too little oil and they’re dry.  UGH. We ate them anyway.
