Recipe: Lemon Fig Cookies
We’re on day 20 of our 30 Day Health Challenge and I just couldn’t help it…I needed a dessert. And not just a something sweet so I’ll grab a banana or have sweet potato for dinner. I needed something resemblance of some kind of dessert. So I stretched the Challenge a little and came up with a quick 4 ingredient, cleansing, satisfying “cookie”. I found that if you call it a cooke, it satisfies even more. I mean, who wants to eat something called a “Cleansing Fruit Fat Disc”?
I literally jumped off the couch and made these in 5 minutes. It took me more time to take 3 pictures of the things than it did to make them. Again…not a food photographer here…it’s on the list to sharpen (who are we kidding, develop) my photo/staging skills. Right now my focus is solely getting through the 30 Day Health Challenge and bringing you real recipes.
What you need:
About 8 large-ish dried figs (any kind will due, I used black mission figs for these)
.5 cup cashews or macadamia nuts (or even better a combo of both)
.5 cup shredded coconut, unsweetened of course
juice from half a small lemon
If your figs are especially dry you may need to add a couple drops of water until desired consistency. Or if you’re not as impatient as me, you can soak the figs for about 10-15 minutes prior and drain liquid.
Process all in mini food processor until crumbly texture. Form into balls or cookies or bars. Cookies are the most fun! Made 8 cookies. I refrigerated them all of 5 minutes just to form up a bit, formed into cookies and we promptly ate them all. Sweet tooth-1, Shannon-0
But, c’mon, these were no cheat. Cleansing antioxidant properties of the fresh lemon juice, cleansing fiber rich figs, super healthy fats of the macadamias and coconut which helped to stave off a blood sugar spike from the figs. These were clearly health food. No guilt here…enjoy!
