Recipe: Peppermint Patties
In my stocking this year I got some “all natural” peppermint patties. Supposedly the ingredients were only honey, dark chocolate and coconut. At least according to my hubby. I didn’t actually get a package with ingredients because he had to “sample” them before stuffing my stocking. After eating quite a few, I decided I wanted a more healthy option. Or at least one I know all the ingredients to.
These are incredibly easy to make and with all the coconut fats, they make excellent work snacks. Just pop one in between clients and I have my dark chocolate antioxidant boost and my extra energy from the coconut.
INGREDIENTS:
- 1 cup shredded coconut (unsweetened of course)
- 1/3 cup coconut manna
- 1/3 cup coconut oil
- 3 drops high-quality peppermint oil
- 1 cup dark chocolate chips (70% cacao or greater)
- pinch of pink Himalayan salt
Mix all ingredients except chocolate and salt in food processor until smooth. Use a silicone candy tray, small silicone cupcake liners or small cupcake paper liners.
Over a double boiler or glass bowl over pot of simmering water, melt chocolate. Add pinch of salt (just a pinch) and stir until smooth and creamy.
Fill each liner with 1/2 teaspoon chocolate. Then cover with 1/2 -1 whole teaspoon coconut mixture. Refrigerate for about 10-20 minutes (while you clean up) to harden slightly. Then cover with 1/2 teaspoon chocolate. Refrigerate for about an hour, then remove from liners and store in fridge.
Refreshing and satisfying. You can thank me later.
