Blog Post: Day 21

Tuesdays are fun.  I don’t go into work until about 4 so I can sleep in.  Hahahhaahaaa.  “Sleep in.”  That’s funny. But we do get to sit on our porch drinking coffee a lot longer than usual.  While our toddler entertains us with his tantrum throwing skills mixed in with his extreme sweetness.

Since we had a busy morning planned to Costco we had green smoothies.  Kale, pineapple, cilantro, parsley in coconut water.

I was so smart and packed us a snack for our trip to the globogrocery.  Hunger pains while out are a huge pitfall when attempting to stick to a healthy diet.  So I packed us a lunchbox with leftover pineapple cole slaw and a few brazil nuts.  Baby boy got some crackers…sigh…and a fruit & kale squeezie thing with some grapes.  Baby girl got the boob.  And we all snacked happily in the car in the Costco parking lot :)

Lunch was leftover cauliflower soup with kale pesto and a few dried figs after for something sweet.

Then it was off to work for the evening.  Dinner was zucchini, beet, carrot, ginger and scallion cakes. My ever helpful and amazing hubby did most of the prep work.  I came home to this:
